It may be Trig's store, but it’s really Tula's deli.
Way back in 1971, when Trig Solberg and his wife Tula opened their first store in Land O' Lakes, Tula was in charge of the deli. She began with seven core dishes created using her own favorite recipes: Chicken Almond Salad, Baked Beans, Broccoli Raisin Salad, Crab Salad, Original Potato Salad, Coleslaw, and Sweet & Sour Slaw. The Tula's line of signature items has been carefully expanded upon over the years.
Twice a year, a panel of Trig's deli managers test new recipes for acceptance into the Tula's line. The testing regime is tough so we can make sure every recipe chosen is worthy of the Tula's name. Currently, there are 198 salads in the Tula's line. The variety on hand changes by season and from day to day.
Not to be completely outdone by Tula in the area of signature items, Trig took inspiration from the 18 foot open-air grill at Tasmania (a Northwoods outdoor food and entertainment venue named for his initials). Tasmanian Ribs and other Tasmanian specialty items are Trig's own favorites.

Preparing food for large groups can be challenging if you haven’t much experience in quantity cooking. The toughest question is, “How much food is enough?”
There’s no simple formula available to provide the answer because many factors make a difference in how much your guests will eat. General portion suggestions for many foods are provided here, but keep in mind they are just a place to start. You’ll need to adjust these figures due to a number of considerations:
- More men in attendance than women will mean larger portions.
- Children eat smaller portions than adults.
- Rich food is more filling so you’ll need less of it.
- A longer party requires more food than a shorter event.
- Parties held near mealtimes have hungrier guests.
- With more options available, guests will generally have less of each item, but…
- With more options available, guests will generally eat more in total.
- If serving Hors D’oeuvres before a meal, guests will usually have six bites.
- If Hors D’oeuvres are the meal, plan on 4-6 bites per guest per hour. The more guests and the longer they will be visiting, the more options you should have available.
- If serving more than one dessert option, reduce the expected portion of each by less than half.

Hot Party Tips
A rule of thumb for appetizers is three pieces per person per hour. A two-hour party with 20 guests calls for 120 appetizers. Don't serve all of your hot appetizers at once. Serve them throughout the party to ensure they are at the perfect temperature.

Keep Foods Safe
- Keep cold foods cold at 40º F
- Keep hot foods hot at 140º F
- Keep track of how long foods sit on the buffet table
- Replenish foods every 30 minutes
- Discard food after two hours
Garnishes and Food Tips
- Add thin lemon slices to water
- Soften butter and mix in fresh herbs or garlic and put in pastry bag to make pretty flowerets for your butter plates at each place setting
- Chop up fresh herbs and sprinkle them over the top and side of the plate to give it a professional look
- Fill unusual or seasonal serving dishes with candy and nuts
Additional Considerations
- If you know something will be popular, which is often the case with shellfish appetizers, have more on hand than general guidelines suggest.
- Don’t serve the same type of food twice (such as a shellfish appetizer and a shellfish main course).
- Have some handy "bulk" foods on hand to make sure your guests can fill up and won’t go home hungry. Breads, nuts, olives, pretzels, chips, and other snacks can be put out as needed.
- Variety is important, including in less obvious ways, such as color, texture, and temperature.
- Always round up your estimates.
