Frenchy’s recommends this Florida Stone Crab Claws with Key Lime Mustard Dipping Sauce

3 lbs. Florida Stone Crab claws, medium-sized
1 cup light mayonnaise
5 T. Dijon mustard
4 Key limes (or two regular lines), juiced
Sea salt and freshly ground pepper, to taste


Crack claws using a wooden hammer or a seafood cracker, remove shell and movable pincer, leaving meat attached to the remaining pincer. Set aside and keep refrigerated until use. In a small-sized bowl combine the mayonnaise, Dijon, and lime juice. Taste the mustard sauce and adjust seasoning with salt and pepper. Serve stone crab claws with the mustard sauce. Yield 4 servings.

They have a passion for stone crabs that began many moons ago. Founder, Michael Preston, aka "Frenchy" has built an empire based on fresh local seafood. In 1981 he opened his first restaurant, Frenchy's Original Cafe on Clearwater Beach which is still thriving today. Soon thereafter he successfully opened four more restaurants, all within a couple miles from one another. Frenchy's local success became very contagious, and he eventually partnered up with one of his colleagues and opened the first "Clear Sky" restaurant. With his valued leadership and exceptional management team, they have been able to open four more Clear Sky locations that are extremely successful and will likely continue to grow.

The team at Frenchy's Stone Crab Company has an old school passion for quality seafood and they have grown stronger than ever! Their high standards would never let them jeopardize the legacy created over 40 years ago. Their team makes sure that quality control is preformed to the highest level, and meets their founders' expectations! 

In conjunction with their proven success, they are also geographically located in the prime living habitat for the best tasting stone crabs in the industry. Their crabber's fish the west central coast of Florida from Crystal River to Fort Myers Beach, which is known to have the perfect water temperature for crabs most of the year. That consistent temperature ensures full bodied claws full of flavor!
